The flavors POP when you bite into this warm sweet potato dish. It has a hint of orange, a touch of cinnamon, a little ginger, and is finished off with toasted marshmallows. Wow! This dish is a favorite of mine if you haven’t gathered that all ready. I love sweet potatoes any day of the week, but this Holiday version made with marshmallows takes the cake. I will sing its praises from my kitchen, especially around the Holidays.
I use Vegan Marshmallows, which taste fantastic. You may have thought marshmallows were vegan, but that is not the case. So read the labels. Click the link below to see the brand that I buy on Amazon. I believe Whole Foods also carry them.
Time runs by so fast, and I am sure you are busy planning and preparing for the Christmas season. You can make this dish ahead of time, which makes it a great side dish for the Holiday meal. Add the marshmallows on right before you bake it, and it will have that beautiful golden look that makes it such a festive dish.
You can even add some pecans to the mix for those of you that enjoy a little extra crunch.

VEGAN SWEET POTATO WITH MARSHMALLOWS
I am so excited about this Vegan Sweet Potato with Marshmallow recipe. I mean, how can you go wrong with sweet potatoes topped with Marshmallows? It is a Holiday side dish in our house, tasting more like a dessert than a potato dish, but oh so wonderful.

- 2 pounds sweet potatoes, peeled
- 3 tablespoons vegan margarine (optional)
- 3 tablespoons maple syrup
- 1 tablespoons orange juice concentrate (frozen)
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 cup pecans, chopped
- 1 bag Dandies marshmallows
Peel and slice sweet potatoes. Add to a medium saucepan, cover with water (2 1/2 cups), add 3/4 teaspoon salt, and bring to a boil.
Reduce heat, cover with lid, and let simmer for 15 minutes until tender.
Mash the potatoes. Add vegan margarine, vanilla, cinnamon, ginger, a pinch of salt (optional), maple syrup, and orange juice concentrate. Stir to combine.
Add to a baking dish (8 x 8 in). Top with chopped pecans (optional) and cover with vegan marshmallows ( Dandies).
Bake at 350 for 20-25 minutes until marshmallows are golden brown.
Dandies can be bought at amazon.com, Whole Foods, or directly from the Dandies website. They come in two different sizes, regular or mini, and either one will work.
If making this dish ahead of time, prepare as above, but before baking, cover and store in fridge until ready to serve. Bake per instruction above.
